Easy One Skillet Squash Casserole

This is a yummy low carb recipe that is an all in one dish! You may bake your own chicken, but to save time and effort I buy a rotisserie chicken and add chopped pieces of it. This fills you up and you can go back for more without guilt! Make sure you don’t use low fat cheese if you are going low carb because the “low-fat” has sugar added! Grab your fresh garden squash and enjoy!!

Ingredients:
2 tablespoons olive oil
6 yellow summer squash, cut into 1/4-inch-thick slices (about 1 1/2 lb)
1 medium yellow onion
1 cup (4 oz) Velveeta grated cheese
1 Roasted Chicken (I get mine from Wal-Mart)
Salt and ground black pepper to taste
Chopped fresh chives to garnish (optional)
Directions:
Preheat a large skillet over medium heat. Add the oil and heat for 30 seconds. Add the squash and onion and cook, stirring occasionally, until the squash is crisp tender, 4 to 5 minutes.

Stir in the cheese and cook stirring constantly, until it has melted slightly, 1 to 2 minutes. Remove the pan from the heat, season with salt and pepper, and garnish with chopped chives, if desired. Serves 6 to 8.

WEIGHT LOSS RECIPE

Creamed Spinach Omelet
Ingredients:
2 eggs
1 cup torn baby spinach leaves
1 1/2 tablespoons grated Colby/Cheddar cheese or Parmesan cheese if you like
1 Tbs sour cream
garlic powder, salt and pepper to taste
Directions:
1. In a bowl, beat the eggs, and stir in the baby spinach and grated cheese along with sour cream. Season with garlic powder, salt, and pepper.

2. In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.
You may also add sautéed mushrooms, ham, and chives for a delicious variation! Enjoy!

Kathy's Low Carb Chicken Salad

This is the best chicken salad I have ever had. My dear friend, Kathy, was so kind to share the recipe. This has been served at bridal and baby showers and all to rave reviews! Another added plus is the fact it is so SIMPLE!! I do add a little more than she does, but on what I add I will put “optional” beside it. Give it a go…you will love it!

Ingredients:
2 cups chicken (can be canned)
1/2 cup celery, chopped fine
1/2 cup almonds-toasted (I use pecan pieces and I toast them in the microwave)
1 cup Kraft Mayonnaise
2 Tablespoons lemon juice
1 Tablespoon onion, minced (I use Texas sweet and I use about 1/4 cup)
1/8 teaspoon salt
Dried cherries (to taste), optional

Directions:
Drain and crumble your chicken until it is very fine…I use a chopper! You want it the consistency you find in tuna salad. Add the remaining ingredients and mix well. You may serve on crackers, bread, or in a romaine lettuce wrap. If this was any easier you would be…SLEEPING!! Enjoy, sweet friend!!
*To toast pecans in the microwave, put them on a plate and microwave for 1 minute. Stir and microwave an extra 30 seconds until desired flavor

Award Winning Swedish Nut Cake

SWEDISH-NUT-CAKE

RECIPE

This recipe is a tried and true addition to any potluck or good for any family gathering! You cannot fail with this one! It is moist and delicious every time! This one actually won a “bake-off”. Enjoy!!

Ingredients:
2 cups flour
2 cups sugar
2 eggs
1 1/2 teaspoons baking soda
1 teaspoon vanilla
1 20 ounce can crushed pineapple
1 cup chopped nuts (any according to taste)

Icing:
1 stick butter
1 8 ounce cream cheese
1 box powdered sugar
1 1/2 teaspoons vanilla

Directions:
Mix cake ingredients with a spoon. It is not necessary to use an electric mixer. Spray a 13×9 with a non-stick spray (bottom only). Bake at 350 degrees for 35 minutes in a preheated oven.
Stir together ingredients for icing and pour over warm cake. You can poke holes in the cake with a toothpick before pouring the icing
